Recently, a customer inquired about his first name. “Chef,” he said. “No, come on,” she said. “Really,” he replied. “That’s what my momma named me. If I could get hooked up with Skype and get my momma on the line right here in this truck, that’s what she’d tell you.”

Noting his hard-to-place accent, the customer, Chef Laurie, asked him where he was from. His rambling non-answer indicated he was “an American icon from all over the country” and that he had engaged in intergalactic space travel.

When it comes to food, however, Johnson, who rolled his lime green food truck into Harbor Island just over a month ago, is not so coy. 

Clearly, he spent time in New Orleans, about 15 years, he reckons, learning from the top chefs in town. Behind the counter, a Saints hat hangs on a peg and Mardi Gras beads hang off a rod, ready to be passed out to disappointed kids after they order a sold out item.

Almost every customer who came up to the truck commented how odd it was to be able to get “Momma’s Creole Lobsta Roll [sic]” and an “Andouille Dog” from what one woman referred to as a hot dog truck.

“This is a fine restaurant that happens to be on four wheels,” he said, wearing a monogrammed chef’s hat and white jacket with knotted buttons. “We’re here to put the funk in the food.”

Of course Johnson isn’t his real name.  In his world, everyone has a nickname: His youngest son: “Little Chef.” His wife: “Chef BB.” The customers: Put chef before their first names.

In New Orleans, he said, the word Johnson is used to signify the epitome of something. Two women were walking along and one said to the other, “You’re so lazy, you’re Lazy Johnson,” he said to illustrate the concept.

One customer who had the lobster roll, Chef Susie, who lives in Tarrytown, returned to the truck about an hour and a half later to buy some chips and a drink. “That was the best lobster roll I ever had,” she said. “I was walking along and just every bite, I realized how great it was.
